Victoria Arduino calls the Black Eagle Maverick their ‘most intelligent’ coffee machine to date — and it’s easy to see why. Victoria Arduino tore up the standard espresso machine blueprints and redesigned every single aspect of the machine.

It is a system that can instantly solve the problems of a coffee shop. Gravimetric technology guarantees a perfect espresso coffee made with maximum precision by ensuring total control at all extraction stages.

The barista just has to set the weight of the liquid in the cup for each blend and each espresso cup can be made with the same ratio, ensuring a consistent brew. With gravimetric technology, the weight of the liquid extracted is measured directly in the cup. The data is much more precise and, more importantly, is not affected by other factors, such as the shape of the filter, the tamping force on the coffee, the condition of the showerheads, and more. The barista always has complete control of each delivery. The quantity in the cup is always programmed and any difference between one delivery and the next is eliminated.

The smart design of the Maverick equips baristas to design their own style of coffee. Armed with Victoria Arduino’s unique PureBrew technology, the Maverick lets baristas create a bespoke extraction profile for their espresso. The Maverick even allows the barista to brew an entirely new style of filter coffee, directly from the espresso machine.

PureBrew technology uses pulses to control the flow of water through the coffee. Slow pulses during preinfusion keep the pressure low until the puck is fully saturated and ready for extraction. More intense pulses allow the pressure to rise and develop the full flavor of the espresso, while gentle pulses during the postinfusion stage soften the extraction, eliminating any bitter or astringent flavors from the coffee.

The technology is complex, but the controls are very simple: the barista can simply switch between brew styles at the touch of a button, and let the Maverick do the rest. Baristas that want more control can choose the timing and volume of the three phases of extraction, and the Maverick will automatically set the optimum pulse profile.

But PureBrew does more than just transform your espresso brewing. The Maverick’s conical filter basket, lined with a double layer of micro-thin mesh, allows the barista to brew filter coffee from the espresso machine. The Maverick makes it easy: just choose the recipe that suits your coffee, and the machine takes care of the rest. The filter coffee it creates is unique: more syrupy and full-bodied than a manual pour over coffee, but more delicate and subtle than traditional espresso drinks.

At the heart of the Maverick, the new T3 Genius engine gives precise control over the brew temperature, while only heating exactly the amount of water needed for extraction. Smaller group heads and boilers heat up faster and can react more quickly to any changes.

The Maverick’s steam boiler operates at 2.1 bars — twice the pressure of standard boilers, which creates dry, powerful steam, while reducing the amount of water needed by half. Baristas can choose a lower pressure setting to steam small amounts of milk, so none is wasted.

The Maverick also recycles as much of the energy it uses as possible. A smart water-cooling system keeps the pump cool, and simultaneously preheats the incoming water. Heat exchanges capture even more waste heat from the drip tray.
