How does CVap® work?
CVap® technology controls the temperature of water molecules inside the food by heating the water basin inside the oven and creating a humid environment. It, in turn, heats the food, equalizing the temperature of the water molecules inside the food with the volatile water molecules inside the oven. This process occurs due to thermodynamics, where the warm particles are attracted to the cold ones until the temperatures are equal.
The distinctive feature of CVap® technology is that it also uses dry heat to prevent moisture condensation on the outer layer of food. This combination of moisture and dryness gives the user control over the results in texture and degree of crispness that is not possible to achieve with standard ovens.
